Wildlife Collection: Bluebonnet Straight Bourbon

Spirit shaped by the heart of the Hill Country

Named for the wildflower that announces spring across the Texas Hill Country, Bluebonnet marks something new for the Wildlife Collection and showcases our Texification process by taking our Kentucky distillate and letting the Texas climate do the work.

Our proprietary mashbill was distilled in Bardstown, KY, then brought home as white dog to fill into barrels and age entirely in our Blanco rickhouses. From the moment these four barrels were sealed, Texas took over. They rested for 5 years and 7 months on the north side of Rickhouse 1, through some of the most punishing climate the Hill Country has on record: back-to-back summers of relentless heat and extended drought & winters that brought record cold. Every extreme pushed the spirit deeper into the barrel staves, building the kind of complexity you can't craft otherwise.

This isn't a Texas whiskey by designation. But it is, unmistakably, a Texas whiskey by nature. As always, a portion of proceeds from every bottle sold will benefit the organizations that care for our wildlife, and this year we are partnering with the Lady Bird Johnson Wildflower Center, dedicated to preserving and restoring the native plants and landscapes that make this place unlike anywhere else on earth — including the wildflowers that inspired this very whiskey.

First-Ever Holiday Wildlife: Jackalope straight bourbon

Named for the mythical creature of the American West, Jackalope is as rare and elusive as its namesake and the final release in our 2025 Wildlife Collection.

Jackalope delivers exactly what we love most in a winter whiskey: warm, sweet spice that makes you want to linger by the fire. These five barrels spent up to four years aging in the Texas Hill Country through extreme drought, unrelenting heat, and intense cold snaps driving a level of complexity and viscosity you'd typically only find in much older bourbons.

Tasting Notes

Color: Mahogany
Nose: Cardamom, dill, shortbread, molasses, fresh cut oak. Opens to caramel, cocoa powder, and a pleasant nuttiness.
Palate: Big and chewy with candied nuts, honey, dark cherry, biscuit, creamed corn, and a pleasant ethanol warmth that coats the palate like a warm blanket.
Finish: Long and robust with baking spice, water cracker, and dark fruit. Leaves the chest warm long after the dram is gone. Perfect for a nightcap on a cold night.

This extraordinary Straight Bourbon takes its name from the elusive Guadalupe Bass, a species found only in the rivers of the northern and eastern Edwards Plateau of Texas.

Introducing Guadalupe Bass Straight Bourbon, an exceptionally limited blend of three seven-year-old, cask-strength collector’s barrels. Part of the highly coveted Milam & Greene Wildlife Collection, known for exploring how climate shapes whiskey’s character, each release in this series has achieved cult status, selling out within minutes. The result is a more layered and nuanced whiskey with added richness and complexity.”

An Extraordinary Bourbon for the Discerning Collector

This exceptional Wildlife Collection Straight Bourbon honors the rare Guadalupe Bass, a species found only in the pristine waters of Texas’s northern and eastern Edwards Plateau. Crafted for the true connoisseur, this limited cask-strength release was distilled at the historic DSP 10 in Owensboro, Kentucky, from a mash bill of 60% corn, 36% rye, and 4% malted barley. It was barrelled on May 18, 2018. Two select casks matured gracefully in Kentucky for four years, while the third rested for five years and seven months in Kentucky before their final aging and “Texification” in Blanco. Here, in the desirable north side of Milam & Greene’s Rickhouse 2, it completed its seven years, one month, and four days of aging, developing a depth and character worthy of your collection.

Guadalupe Bass is a powerful bourbon with a resplendent mahogany hue. It has an intense nose of cherry cordial, big bold notes of allspice, clove, nutmeg, and sticky toffee pudding. It is concentrated and complex on the palate with notes of dark cherry and dried apricot, bursts of vanilla and crème brûlée, and a substantial yet smooth mouthfeel. Its viscosity carries a durable finish with notes of menthol, anise, and oak that draws you back for more.
