LIBERTY AMERICAN WHISKEY —A Blend of Straight American Whiskeys.
Liberty is our first American Whiskey, released for the United States of America's 250th year. It's a batch of six hand-selected straight whiskeys distilled two ways across two states: three barrels of our Texas whiskey made in a 300-gallon pot still in Blanco for body and grain, married with three barrels of our Kentucky whiskey made in a continuous column still in Bardstown for sweetness and spice, all of it aged in our own once-used Texas bourbon casks. It drinks like a young whiskey and a very old whiskey at the same time, which feels just right to celebrate America's spirit in its semiquincentennial.
WHAT IS AN AMERICAN WHISKEY?
Bourbon is a type of American whiskey, but not every American whiskey is a bourbon. To call a whiskey bourbon, the rules are strict: it has to be made in the United States from a mash of at least 51% corn and aged in new, charred oak barrels, that new wood is non-negotiable. American whiskey is the wider family those rules live inside: American-made, grain-based, and oak-aged, but free to take a different route to the bottle.
Liberty takes that route on purpose: It carries the same 70% corn mash bill as our bourbon, but instead of new charred oak, every barrel was matured in our own once-used Texas bourbon casks. That single choice, seasoned wood in place of new, is what makes Liberty an American whiskey rather than a bourbon, and it's where the character comes from. With the sharp sweetness of new oak already drawn down by a first fill, the second fill leaves room for grain, maple, and the softer notes underneath. It's still a straight whiskey, aged at least five years and nine months with nothing added but time and Texas heat.
A Blend of Straight American Whiskeys:
Our award-winning team distilled both in Blanco, Texas and Bardstown, Kentucky. The mash bill is 70% corn, 22% malted rye, and 8% malted barley with our proprietary yeast recipe. For Liberty, six barrels — three pot-distilled in Blanco, three column-distilled in Bardstown — were filled into our own once-used Texas bourbon casks and matured side by side through Hill Country summers before final batching, proofing, and bottling in Blanco.
